The Culinary Force

Leading the culinary vision is Chef Scotley Innis, the Jamaican American chef, restaurateur, and hospitality force behind some of New York’s most exciting Caribbean dining experiences, including multiple concepts inside IHG’s Hotel Indigo Williamsburg in Brooklyn.

Known for his bold, globally influenced approach to Caribbean cuisine, Innis brings both precision and energy to Six Coasts, shaping a menu that reflects the richness and diversity of coastal cultures across the Americas. His work, recognized through appearances on Hell’s Kitchen and Chopped All Stars, is rooted in honoring origin while pushing flavor forward.

I’ve always been inspired by the way cultures blend and evolve through food. That sense of connection of people, places, and flavors coming together is what defines family to me. Six Coasts brings that to life, and I’m excited to be part of that journey. We’re going to have a lot of fun with it.
